What is it for? Tarte Tatin is named after two sisters, Stéphanie and Caroline Tatin, respectable innkeepers from Sologne in France whose speciality was a tart with crunchy, caramelised and meltingly soft apples. This upside-down tart was actually invented by Caroline: the younger sister and a gourmet cook. However, we can't be sure if the recipe was the result of a mistake or a deliberate attempt to mask the acidity of the local Sologne apples by mixing caramelised sugar with cooking butter. The tin they used was a simple tin-plated copper tart tin. Stainless steel induction tart tin. This round tin with rather low sides is used to cook the famous upside-down tart.
