What is it for? The small model brass duck press is used to create the dish known as pressed duck. It allows you to crush the duck carcass to extract the juice and the blood. As you turn the wheel, the plunger moves down and crushes the carcas and the various cuts of meat. The blood then flows out via the orifice on the base of the container. The blood will then be used to combine the sauce with port, butter and lemon, prior to serving over thin slices of duck.
