what is it for ? Halfway between the frying pan and the saucepan, the splayed saute pan is, as its name shows, the ideal utensil to cook small pieces of meat or vegetables in pieces with a small quantity of oil after browning them over high heat. Its curved skirt allows easy access to the corners with the whisk when deglazing to prepare the sauce. It also offers a larger evaporation surface that easily reduces the sauce. Do not confuse the splayed saute pan and the saute pan. The use of saute pan is substantially identical to that of the splayed saute pan, but it is reserved for dishes for which no sauce should be prepared afterwards.
